Preferred by pitmasters over brisket on the West Coast - a lean cut with a grain that runs in three directions, hence the name Tri-Tip. An excellent substitute for brisket. Season with a dry rub then cook S-L-O-W in your pit or backyard smoker with Mesquite or Hickory wood.

Slice thin to serve. 1 per package.
